  8. Prepare 1 Optional 1 or 2 ( jalapeno or ghost pepper dice for heat).

Add the bell peppers, chili powder, cumin, red pepper flakes. In a Dutch oven over medium heat, cook chicken and onion in oil until lightly browned. Stir in the broth, chiles, cumin, oregano and cayenne; bring to a boil. Save a big chunk of time simply by using rotisserie chickens from the supermarket and canned chicken broth as the chili base.

  4. Serve in individual bowl. Add shredded Pepper Jack cheese if desired.
  5. For the left overs put in a 2 cup microwave plastic container and freeze. When ready to eat place in sink with hot water for about 40 minutes then heat in microwave for about 2 minutes.Great for those cold days.
