- Knead maida with water, salt and oil. Keep aside to set.
- Grind 1/2 kg chicken to mince. Take the minced chicken in a bowl, add finely chopped onions, 1 tsp black pepper, 1 tsp salt, 2 tsp ginger garlic paste, 1 tsp dark soya sauce, 1 tsp sesame oil and chopped coriander. Mix well.
- Knead your dough again for a minute. Roll it into a large circle with a rolling pin. Take a steel glass and cut out 2-3 circles (like you do for puris). Take one circle, and put 1 large tsp of the minced chicken mixture into it. Apply some water all around the edges which will help to conceal the momo. Start folding it in any momo shape you like. And set it aside.
- Take a large vessel and boil water in it. Place a sieve over the vessel and brush some sesame oil in it before you place the momos into it. Carefully place the momos at a distance from each other as they start expanding once they start steaming up. So we dont want them to stick together. Cover the sieve with an lid big enough that none of the steam escapes from the edges. This is an alternative if you do not have a steamer. Let the momos steam well for 20-25 mins.
