I prepare potato stew to go with appam or ghee rice. The recipe is similar to the Veg stew i had posted earlier. The flavors of the spices and curry leaves blend well with the creaminess and sweetness of coconut milk. Heat a large Dutch oven over medium-high heat.
Instructions to make Potato Stew:
- Peel and dice the potatoes. Pressure cook potato, green chilli, ginger,onion sliced and salt for 2 whistles.
- Grind the coconut and extract the first milk. Then again add water and grind. Extract the second milk.
- Add a tbsp of rice flour into the second milk and mix properly.Add this to the pressure cooked potato mixture and boil for few minutes. Now add the first milk and switch off at the first boil. Drizzle coconut oil and curry leaves. Close and keep aside for few minutes. Serve hot with Idli.. Dosa.. Appam… Or Idiyappam.
